Sounds like they were on a long mining trip to me.
I’d believe that, but BLOCKS of ore? You’d only get that if you smelt it, and who carries 64 coal blocks in a dangerous place? (Aka while mining)
Hi there am on holiday at moment just went on pcb and found my enderchest empty and my inv too.
can only give rough idea on Enderchest stuff and inv.
inv
i had diamond helmet, chestplate, leggings and boots.
a couple of diamond picks and axes, nothing else worth the bother.
in enderchest
enchanted diamond picks and spades, fortuneII & III, silk I or II, including with them unbreaking III, efficiencyIV.
I had 2 of each with the fortune and silk.
2 diamond spades with unbreaking efficiency.
1 diamond spade with same
2 diamond axes with enchants cant remember what they had. unbreaking i think
2 iron picks with unbreakingI effI
most important would be the fortune and silk ones.
At least 2 stacks of diamonds
a few emeralds and iron blocks - don’t remember how many prob 1/2 a stack of each

about 1/2 stack blaze rods
around 1/2 stack obsidian
about 1/2 stack sea lanterns
Cant think of anything else so they cant be that important.

-1 Ender Dragon Egg (Given to me by Yomi)
the rest were just random book and quills with some useless notes
As for my inventory, I think my inventory was already empty since I get OCD and like having my chests organized and having a clean inventory lol.
My deepest sympathies that a video game server, ran entirely voluntarily by people who don’t play the game, using their own money to run it for the sake of other people to use, doesn’t meet your high demands. It is of course 100% reasonable to expect it to never crash or have any errors when the game and associated software is constantly updated with limited testing.
Yes it did enderchests mine was full so bit upset it was empty when I looked in it the other day. Have listed what I can remember on page 2 of this topic

Ok just got back online after being away for a while. I’ve lost:
2 diamond pickaxes, one with fortune 3, efficiency 3 or 4, unbreaking 3
The second had silk touch, efficiency 3, unbreaking 3
1 diamond sword, with sharpness 3, unbreaking 3
Full iron armour
1 diamond shovel, with unbreaking 3, efficiency 3
1 iron shovel
2 iron axes
1 stack of torches
Around 30 cooked beef
4 or 5 stacks of stone
10 stacks of stone bricks/stone slabs
3 stacks of glass
Probably other unimportant stuff I’ve forgotten about

The issue seems solved now, and I kept my money and my rank, but I lost all my items on survival, and would like to get them back. I only care about the tools:
