It would be neat if we could link shops by fully tearing the walls down in between, rather than just placing a door.

Because if you remove the wall between the shops, from the outside, it looks like 1 massive shop, which is an unfair advantage over other shops. Seeing a larger shop means more people are likely to go into it. By all means decorate your shop to entice people in.
Also, it means you get extra space. Admittedly not much extra space, but still, it’s another unfair advantage.
Just remember this isn’t real life. In the market we just want people to be able to trade stuff without having to worry about the rich buying more shops to make themselves richer and leaving no empty shops for new players.
I don’t like the idea of a full on tear down of the walls, but enlarging the area that can be open may be reasonable. At the very least, double doors.
